Best Electric Knife Sharpener for European Knives

I was looking at a couple of the Chefs Choice knife sharpeners. I particularly like the XV sharpener but all of my knives are of the softer steel European made. My wife wanted a sharpener that did not have to be on the counter all the time and would keep the sharp edge the longest. That is why I decided on the Chefs Choice 120 knife sharpener. It put a nice sharp edge on all our knives. So sharp my wife cut her finger and did not notice it tater on in the day. she was lucky that cut drew no blood. I like the XV sharpener but in my reading the experts said the 15% angle is great for cutting but not for chopping because it doesnt hold its edge real well and needs to have the blade continually retouched due to the European blades are made of softer steel and don hold the 15% edge as well as the harder Japanese steel does. I am sure both sharpeners do a great job, but for the knives in my kitchen the Chefs Choice 120 was the right sharpener for us.
The only Con i could tell was that for wider blade, I had to put painter's tape on the size of my wide knives so the sharpener would not scratch the side of the blades.Vollständige Rezension lesen

Great easy to use Knife Sharpener

Already had one for 25 years, this replaced it and works good as new.

Overall, I like the sharpener

This is my first knife sharpener, so for what my opinion is worth, I think it works as it's supposed to, as it is sharpening my knives. I took a star off because it does put a scratch on the side of my knives. I will have to tape the sides to protect the knives in the future.Vollständige Rezension lesen

Works great. Just turn on and slide the knives through the various levels.

Great Sharpening Tool!

I previously used a manual sharpening tool...metal and ceramic then finished with sharpening steel. Did okay but not quite the best edge. With Chefs Choice, sharpening is a breeze!
