Fresh Flour is BETTER!

What a difference fresh flour makes in the crust of the pizza. I had bought a 55lb bag but after it sat on the shelf for a year the crust would no longer rise as high and have the nice chew fresh flour makes. If you have old '00' flour throw it out or just use it for surface work and not the main dough.
