Dirty rich brown gumbo like served over white rice
It frequently gives multiple receipts for same dish leaving it up to cook which version appeals to them. Seasonings appropriately used. Creole was nfluence very nicely done. Written my own notes where I adapted to my needs. If you can read & shop appropriately then you can cook! And be proud of end result. Verna Galimatias (gumbo) received rave reviews by friends from Louisiana. Altered by decreasing to 4 is tomato sauce, using spicy v8 for veg juice, & tomato juice, added 1 box fish stock, 3 tblsp chicken stock, 1/2 bottle red wine, 1 tsp thyme, crab claws & shrimp.
