This English textbook written by French authors on French winemaking practices is a readable, well-written, comprehensive text. It is an invaluable resource for the serious student of wine. This first volume of the two volume set focuses on how wine is made while the second volume covers the post-fermentation process. This text is a scientific reference book that is written at the level to be read by students and professionals. To get the most benefit out of the text, the reader should be relatively comfortable reading scientific literature. It contains many graphs and tables with references back to the primary literature.

From Vines to Wines by Jeff Cox (1999)
This book is destined to be a classic. The information is clearly presented in a very readable format and contains excellent illustrations. I predict many fine bottles of wine will be produced by readers of this book.
