Takes an edge so easy!
I have a Wustov knife that costs 10 times more, and is 10 times harder to sharpen. While high carbon steel is harder to maintain and will rust if you don't hand dry it, it takes an edge so beautifully! Just a few sweeps on the ceramic sticks and it just glides thru a fresh tomato. Plus it's made in America.

So easy to sharpen!
I have a Wustov knife that costs 10 times more, and is 10 times harder to sharpen.
