History In Your Kitchen
The City Tavern cookbook's historical presentation of life in Philadelphia both before, during and after the Revolutionary War is exemplary to say the least. It incorporates both the growth of Philadelphia as an epicenter of multinational life and the ever growing need for communal establishments throughout the new world. The establishment of meeting houses and restaurants such as City Tavern where the finest of foods of the time were artfully and skillfully prepared were both a necessity and indulgence for the makers and shakers of Revolutionary times. The way the history is presented is both interesting, informative and calculated to lure you into the depths of what life and times were during the formative years of the birth of our nation, The United States of America!
I am a fan of Walter Staib with his most wonderful portrayal of the somewhat primitive open fire
kitchens at some of our greatest historical sites, the recipes and methodology our forefather's chefs utilized to please both their employers and invited guests.
The assembly of recipes Chef Staib has presented in The City Tavern Cookbook are so greatly appreciated for their historical ambiance, delectable flavors and tastes of the historical time. Also, so greatly appreciated is the
rationalizing of today's modern kitchens and Chef Staib's ability to convert these timeless recipes so that todays chefs and household cooks can enjoy them!
A hearty well done to Chef Walter Staib and all the collaborators in the production of a timeless cookbook for all homes both in America and Europe.
