My fourth Shun
I have had three Shun knives for about five years and wanted a scalloped knife for vegetables.
Shun knives are very sharp and are excellent quality, they have a 16 degree angle which makes them sharper than standard kitchen knives.
This one is as good as the other Shun knives that I own. I have had knife training and I think that it is best if you have the least some basic safety training before using these - I don't let our children use them (they are both over 20) because they can be dangerous if not used properly.
There are two negatives
1) They need honing and sharpening quite often to retain their highest level of sharpness.
2) I find small cuts in my hands that I didn't even feel caused by the razor sharp edge - really - I look at my hands hours later and find small cuts that must have been caused the Shun knives, there are also cuts in our wash cloths.
