very vigorous yest even at 7 days plenty of activity in bucket i used half mineral half distilled water with a ph of 6.8 and at day four to day seven the ph had of course dropped but had stayed stable at around 4.2 which did not seem to slow yeast reaction at all i did how ever use 8kg of sugar out of habit then realizing only 7kg was needed so i fermented to 9 days and yeast seemed to have no problem metabolizing the extra sugar the added carbon did it's job very well a great product A plus would be more than happy to test products from this company again
