Break and pastry Bible for All
This is an excellent cookbook for bread and pastries. It includes detailed information on kneading and baking, delicious recipes for a variety of items including sourdough, and easy to read text. I've used it with middle school students because it explains well how baking works and the recipes are very accessible.
