Powdered Perfection!
Xanthan gum is an extremely useful ingredient allowing you to maintain good consistency. The trick is that it takes such a small amount. For instance, I enjoy making a creamy Italian dressing, but prior to using the xanthan gum, it was a bit runny. For a one cup recipe, it only took 1/8 tsp. It is so much better than using a flour or cornstarch slurry when making gravy. Quick advise - When using it to thicken gravy, etc. - it needs to be whisked in quickly.

Nifty gadget that makes life easier!
