    This is a wonderful reference for those of us who want to cook vegetarian but are more familiar cooking meat. Mark Bittman give overviews of various types of food ingredients, and offers ways to change up many of the recipes, as well as to make them vegan. I'm learning so much and am so glad I bought this book.
