    amazing variety

    I never knew there were so many wonderful breads in Italy. Each recipe had a lovely description and most some history. The best part is that most also have directions for making the dough by hand, by mixer and by processor. I thought making dough with a mixer was easy until I discovered the processor method. The process is a little different so the added specific information is very valuable. I originally took this book out of the library. When I marked the pages of recipes I wanted to copy I had so many I decided it would be better to just buy the book. The book has a newer edition but the old one is very similar and a better bargain if you can find it. I would highly recommend this book even for beginning bread bakers.

    Reliabe Clear Excellant and Comphrehensive giude to Italian Baking

    I love this book for distinctively delicious Italian type breads and pizza and focaccia doughs. The recipes are spot on. It is my go to book for Italian baking including a pizza dough that I tested along several other excellent doughs with a college class. The recipe for pizza dough from the Italian Baker got unanimous votes for being the best pizza dough. That’s a conclusion with which I heartily concur. A couple whom had spent considerable time in Italy and attended another class I taught using that pizza dough recipe and one of the focaccia recipes reported that the product of that class was as good as the best they had in Italy and better than much of what they had in Italy.

    A favorite in my collection

    This is the second Carol Field book in my collection. I love Italian and Mediterranean food. This book gives a broad overview of Italian baking from rustic to classic to dolce to savory to festive holiday bread. Each recipe gives a background context and complete recipe including methods; by hand, by mixer and by processor. Again a favorite. Recommended!
