You really need to try this.
This thing is great. I was all ready to not like it but it makes great jerky. If you're a jerky purist like I was, you probably think making jerky from ground meat is a sacrilege, but I have to say it's really great tasting stuff. Maybe don't think of it as jerky. It's sort of like a good old beef stick pepperoni type product. Doesn't get stuck in your teeth either. I'd say give it a shot. I gave 2 of them out as gifts.This thing is great. Large, but lightweight and easy to use
I make a lot a ground meat jerky. 5-10 pounds a week. I was tired of using up the cheaper brands of jerky guns. They just don't last. I started using LEM guns a year ago and recently made the move to the jerky cannon because it enabled me to fill up to 1.5 pounds of ground meat at a time. With the extra meat comes extra weight and longer times squeezing the trigger. This means your hand get tired faster. I don't mind any of that because it saves time. The cannon is metal, not plastic so it should last longer. It also comes with a long handled brush to make cleaning easier. I've used this unit 3 times so far and am very happy with the results. Terrific machine that will last for many years.
This is an amazing gizmo. After someone gave me 5 pounds of ground elk meat I had to figure out what to do with it and after debating a bit I bought this machine. It is amazingly simple and easy to use and I made jerky and sticks out of the elk meat and it turned out great. I did not use the seasoning packets included with the machine, instead using a simple recipe I found online. It is very easy to clean afterwards too, with one exception. The two extruder tips, one for jerky and one for sticks, are very well made but they have a slight flaw in my opinion. The insides of the tips, where the tubes attach to the flange, have slight ridges where the tubes were pinched onto the flanges, and these required cleaning out the little bit of debris using a toothpick. It seems like a better design would be to have any such crimps on the outside of the tips where they don't come into contact with the meat. It would mean changing the tooling at the factory but it would be a minor change. One other slight flaw is the oblong opening where the jerky is extruded out of the tip. That oblong hole should have radiused ends, and instead the ends are a little pointed in the middle, the result of pinching the tube to make it flat at the factory. This caused the meat to curl a bit as it came out sometimes, because the meat would hang up at that reduced part of the oblong hole. Not a big deal, but several times I had to lay the gun down and assist the extruding meat by inserting a small knife blade to free the blockage. I plan on rounding those two inside corners myself, very carefully so as not to damage the tip, by putting a rod or drill bit inside the hole and forcing the tip to conform to the rod or drill bit with a pair of pliers. I also don't believe this would be an issue if the ground meat is double or triple ground to break up the fibers a bit more. What a great invention and I would surely recommend this to anyone. It is very well made (with the minor exceptions mentioned), and I really expect this to last a very long time.

This is not compact...it is not meant to be. It is the cannon and holds 1.5lbs of meat. It is very easy to use and I recommend it because of the large feature you spend less time reloading it with meat. It does a splendid job of making both round and flat snack sticks. I also purchased some additional nozzles that allow me to use casings to stuff sausage. I have 2 guns that I have used since the '90s but this cannon is the real trick. I really enjoy using it. EASY PEASY!
I have been making jerky for my family and friends for years with a plastic barreled gun that ends up blowing the end off in between because of, well, plastic assembly parts! Very time consuming and frusterating. I got this and WOW, what a difference! It was a breeze to work with and clean up is so much nicer with the metal barrel. I would recommend getting the double jerky tip, which is not included with kit. I make mine with ground beef so this is a must for me. The gun, with the double tip produces much more desirable lengths than from my old gun.
