Synopsis
Out of secrets and dreams and romance, Adela Hernandez Gonzmart and Ferdie Pacheco memorialize their passion for the Columbia in this narrated cookbook inspired by the nation's largest Spanish restaurant and Florida's oldest restaurant. Adela's affair with food is a family legacy that began more than 90 years ago, when her beloved grandfather Casimiro emigrated from Cuba to Tampa, then a little town on Florida's west coast. There, amid scrub palmettos and rattlesnakes, an enclave of Cubans, Spaniards, and Italians worked in the growing cigar industry in a neighborhood known as Ybor City. Casimiro Hernandez found work, saved his money, and in 1905 purchased a bar, where he started selling soup, sandwiches, and coffee. Out of gratitude to his new country, he named his small café the Columbia, after the personification of America in the popular song "Columbia, Gem of the Ocean." Prophetically, he added this motto to his sign: "The Gem of All Spanish Restaurants." This book is both a history of the elegant family restaurant, which now boasts six locations in Florida, and a cookbook of 178 recipes that make them famous. It is also the biography of Adela, the heart of the Columbia, with commentary by Ferdie Pacheco, television's "fight doctor," Ybor City's famous raconteur, and Adela's neighbor as they grew up together in Ybor City. Casimiro became known for dishes that the Columbia still serves--Spanish bean soup, his lusty creation that combines sausage, garbanzo beans, and potatoes in a beef stock; arroz con pollo , a classic chicken and rice dish; an authentic Cuban sandwich; and the 1905 salad, dressed with the family's special blend of fresh garlic, oregano, wine vinegar, lemon juice, and Spanish olive oil. Pijuan, Casimiro's fabled chef from the kitchen of King Alfonso XIII of Spain, contributed numerous works of art, such as pompano papillot and steak capuchina . Adela and Ferdie now reveal the best of these recipes and offer many others, giving lovers of good food the opportunity to bring home the aroma, the seasonings, and the glamour of the Columbia, the gem of all Spanish restaurants., *"Five Forks"--Spanish government ranking *"Recommended"-- AAA Travel Guide and Mobil Travel Guide *Golden Spoon Award-- Florida Trend *"A Spanish happening not to be found elsewhere."-- Holiday Magazine *Epicurean Rendezvous Award for "The best restaurant in Tampa, Florida"-- Fortune Magazine *Fine Dining Hall of Fame Award-- Nation's Restaurant News Out of secrets and dreams and romance, Adela Hernandez Gonzmart and Ferdie Pacheco memorialize their passion for the Columbia in this narrated cookbook inspired by the nation's largest Spanish restaurant and Florida's oldest restaurant. Unfortunately I received a damaged book, the item and the package both were damaged and it was clearly evident its appearance that it happened during transit. The seller was very understanding and gave me a full refund for the damaged book, though it was no fault of their own. Other than the damage, the book was as described, the quality and condition aside from the damaged spot was like new. The cost of the book was reasonable. I would definitely purchase from the seller again.

Although this book was not as described, with no picture of it in the listing, the seller communicated well and quickly gave me a full refund while letting me keep it. The minimal packaging left the book a bit vulnerable (typical for ThriftBooks), but it did arrive safely and timely. As usual, it’s hit or miss with this seller, but often times you can get great values, and their customer service is always very good. Many other sellers with millions of transactions don’t even communicate.

From the prompt communication to the fast shipping, everything was handled with utmost professionalism. The item arrived exactly as described and was well-packaged to ensure its safety during transit. The seller was courteous and responsive, making the entire transaction smooth and hassle-free. I highly recommend this seller to anyone looking for quality products and excellent service.

  • The GEM in my house that enables me to cook the most delicious food ever! Easy, healthy, wonderful!

If you have ever dined at the Columbia restaurants in Longboat Key or Tampa Florida area, you already know the food is far superior in taste, appearance and quality and enjoyment, to any other venue out there serving this type of meal. I do not believe there are any other restaurants that serve this type of food so that alone speaks volumes about this treasure of a cookbook of fabulous recipes. With this wonderful book, you can create these dishes to be exactly the same as the dishes you were served. The recipes are decades and generations in the making, so have been proven long ago to be so delicious, healthy, and so amazingly delightful, they can quickly become your new family's favorite traditions. This book is a must for anyone who loves excellent food that is not difficult to ...

  • Cookbook of a Landmark Restaurant of Tampa, Florida

This is an awesome cookbook written by the matriarch of a well known Cuban / Spanish restaurant in Ybor City, Tampa, Florida, with recipes of some of their best loved dishes. If you have not eaten there, all you need do is follow this guide to some the best meals you have had. Easy to follow and I was surprised that it tasted like being there.

  • Much more than a cookbook

Spanish recipes intertwined with the history of the Columbia Restaurant and Ybor City/Tampa, Florida in personal tales. The history goes far beyond a restaurant start date and dull data. This is life being told, and the characters who lived it. If you've never been to Ybor City, or just passed through, this book will give you a taste of its past and present that will linger.

  • Unique Cook Book

A special sort of cook book because it gives so much background into the source of those recipes. Also, since it is connected with a popular restaurant, it's in another category altogether.
